Preoblikovanje vsakodnevnih obrokov v vir ravnovesja in vitalnosti je lahko povsem preprosto. Ta preprost recept iz ene ponve, ki združuje lokalne gobe, jajca in svežo zelenjavo, ponuja tolažilen in hranilen način, da začnemo dan ali ga mirno zaključimo. V duhu tradicionalne kitajske medicine (TKM) je zasnovan tako, da telo nežno nahrani in prebudi njegovo naravno energijo.

Gobe, listnato zelenje in jajca – preprost recept iz ene ponve

Ta recept je preprost, prilagodljiv in kot nalašč za vključevanje lokalnih slovenskih sestavin – svežih gozdnih gob ter zelenih listov, kot sta blitva ali ohrovt.

Za 2 osebi | Priprava: 5 min | Kuhanje: 12–15 min

Sestavine:

  • 250 g gob (šampinjoni, gozdne gobe ali mešanica), narezane 

  • 1 strok česna, zdrobljen

  • 1 žlica oljčnega olja ali svinjske masti

  • 80–100 g ohrovta ali blitve, grobo nasekljane

  • 2–4 jajca (za večerjo po dve na porcijo, za lažji obrok eno)

  • Sol in sveže mlet črni poper po okusu

  • Kruh, riž ali polenta za prilogo

Navodila:

  1. Segrejte oljčno olje v večji nelepljivi ponvi na nizki temperaturi in vanj dodajte zdrobljen česen. Nežno ga pražite približno minuto, le toliko, da zadiši, ne da bi porjavel. Nato dodajte narezane gobe in jih kuhajte, dokler se ne zmehčajo in spustijo nekaj svoje vlage.

  2. Primešajte nasekljan ohrovt ali blitvo. Če je ponev prepolna, dodajte polovico zelenja, počakajte, da se nekoliko zmehča in upade, nato dodajte preostanek. Vse skupaj začinite s soljo in sveže mletim poprom.

  3. V zelenjavni mešanici naredite eno ali dve vdolbini in vanju ubijte jajca. Kuhajte na zmernem ognju dve do tri minute, nato ponev pokrijte s pokrovko in pustite še dve do tri minute oziroma toliko, da so jajca po vašem okusu. Mehkejši rumenjaki potrebujejo krajši čas.

  4. Jed postrezite takoj, najbolje s kosom kruha, z rižem ali s polento – za preprost, hranljiv in domač obrok.

This simple one-pan recipe, blending locally sourced mushrooms, eggs, and fresh greens, is a comforting and nutritious way to start your day or end your evening. In the spirit of Traditional Chinese Medicine (TCM), it’s designed to gently nourish your body and awaken its natural energy.

Mushrooms, Greens, and Eggs Recipe

This recipe is simple, customizable, and perfect for incorporating local Slovenian ingredients like fresh forest mushrooms and green leaves such as Swiss chard or kale.

Serves: 2 | Prep: 5 min | Cook: 12–15 min

Ingredients:

  • 250g mushrooms (button mushrooms, wild mushrooms, or a mix), sliced

  • 1 clove garlic, crushed

  • 1 tbsp olive oil or lard 

  • 80-100g kale or Swiss chard, roughly chopped

  • 2-4 eggs (two per serving for dinner, one for a lighter meal)

  • Salt and freshly ground pepper to taste

  • Bread, rice, or polenta for serving

Instructions:

  1. Sauté Aromatics: Heat the olive oil in a large, non-stick frying pan over a low heat. Gently fry the crushed garlic for about 1 minute—just until fragrant, not brown.

  2. Cook Mushrooms: Add the sliced mushrooms to the pan. Cook until they soften and release their moisture, stirring occasionally.

  3. Wilt Greens: Add the chopped kale or Swiss chard to the pan. If your pan is full, add half the greens, stir until they wilt down, then add the rest. Season everything with salt and pepper.

  4. Add Eggs: Make a well or two in the vegetable mixture. Crack the eggs directly into the pan.

  5. Cover and Finish: Cook the eggs gently for 2–3 minutes. Then, cover the pan with a lid for a further 2–3 minutes (or until the eggs are cooked to your liking—runny yolks take less time).

  6. Serve: Enjoy immediately. For a complete and nourishing meal, serve with a slice of bread, rice, or polenta.
